One Question and its background:

Will there be major differnces between iOS5 VPN components and iOS6?

With iOS6 coming soon, one should prepare its environment: Which "Junos Pulse for iOS" will be available for iOS6 and will it be different from the version for iOS5? Will it require a certain SA firmware version? And will it be sufficient to check the SA configuration with a iOS5 device or must I also use one with iOS6?

Until go-live we can all only speculate. HOWEVER, it should be fine to validate the config with ios5.
The Pulse version should be the same between iOS versions & the SA should be 7.0 or later (6.5 can support Pulse, but is not a supported version outside of FIPS units)

I was hoping for some developer or engineer to drop a hint.

I have beens suprised once for the Pulse Client for iOS requiring at least 7.1 firmware and users yelling at me - so I got careful.

There are features that require specific IVE OS versions (e.g. Collaboration and Host Checker support require IVE OS 7.2), yes, but in general you should be ok to use any IVE OS version 7.0 and later.
