Why exists sharepoint templates

Hi,

First, a notice, that I'm not a user of sharepoint neither windows, so probably i will make a stupid question

What is a difference using Sharepoint with its template or just a custom profile?

I've created a custom profile for our share point site and I didn't see any difference between this setup or with the template.

There is not practical difference. the pre-defined profiles are essentially shortcuts where the custom profile is ready to go so you don't have to adjust all the settings manually.
