I always prefer for traffic of any cloud-based or internet facing applications to be sent outside the tunnel unless there is a very strong business reason to send it via the tunnel. Especially any bandwidth heavy or real time applications like audio/video.    So if your skype on-prem servers are accessible via internet then send them outside the tunnel, especially right now when everyone is working remote.  ...
